Parmesan meatloaf

*What do you need :

° 1 pound of ground beef
°1/2 pound ground Italian sausage
°1 small onion finely chopped
°1/2″ bell pepper, chopped (I used orange, it was all I had in the freezer)
° 1 tsp. olive oil
° 1 tsp. Worcestershire sauce
°1 minced garlic clove
° 1/2 tsp. spices
° 1/2 tsp. basil
° 1/2 tsp. parsley
° 1 beaten egg
°3/4 cup Italian bread crumbs
° crumbled two slices of white bread
° 1 T. milk
° 8 oz. shredded mozzarella cheese, reserve 3/4 C
°1/4 ounce of Parmesan cheese
° 1 c. marinara sauce plus an additional 1/2-3/4 tsp for garnish

 *How to make it :

In a small skillet, heat the olive oil over medium heat. On high heat, fry the onions and peppers for 3-4 minutes, remove from heat. In a large bowl, add the meat, onions, and peppers with all remaining ingredients, reserving the 3/4″ mozzarella cheese for garnish.

Now, dive in there with the best tools God has given you, and collect everything really well. Once everything comes together, place the mixture on a baking sheet of your choice. I used oval Portuguese stoneware for us. Pour 1/2 to 3/4″ marinara sauce over and spread.

We put in a 400 degree oven about 51 minutes. We take it out of the oven, cover it with the remaining cheese and sprinkle it with a little dry basil. Return to the oven for another 10 minutes. Make sure the meat is not pink before serving, as the baking time will vary depending on the thickness of your loaf. Mine was about 2" thick.

Enjoy!
