*ingredients
°1 cup plus 1 tablespoon all-purpose flour
°2 teaspoons baking powder
°3 large eggs
°1 cup granulated sugar
°1 cup plain yogurt or sour cream
°Half a teaspoon of salt
°Half a teaspoon of vanilla
°Half a cup of vegetable oil
°2 tablespoons of lemon peel
°1 1/2 cups fresh or frozen blueberries
°Lemon glaze / syrup
°2 to 3 tsp of lemon juice
°1 c sift confectioners' sugar
*How to make:
Preheat oven to 350 *
Greased sides and bottom of loaf pan
Sift all dry ingredients for baking
In a large bowl, mix all of the wet ingredients together
Slowly add dry ingredients
In a separate bowl, add 1 tablespoon of the flour to the blueberries and gently stir into the mixture
Pour batter into prepared pan
Bake for 50 to 55 minutes. If a toothpick comes out clean, the bread is ready
We take it out of the oven and let it cool for 10 minutes
Remove loaf from pan and allow to cool on cooling rack
In a small saucepan over low heat, add the powdered sugar to the lemon juice and let it dissolve. Simmer for 3 minutes
Using a toothpick, poke holes all over the loaf, on the top and sides
Use a pastry brush to brush the lemon syrup on the top and sides.
Leave it for 15 minutes before serving
