Ingredients:
1 cup heavy cream
8 oz mascarpone cheese
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup white chocolate chips
1 cup brewed coffee, cooled
1/4 cup raspberry liqueur
24 ladyfingers
1 cup fresh raspberries
White chocolate shavings, for garnish
Instructions:
In a large bowl, beat the heavy cream until stiff peaks form.
In a separate bowl, beat the mascarpone cheese until smooth. Add the powdered sugar and vanilla extract, and beat until well combined.
Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between each interval, until completely melted.
Add the melted white chocolate to the mascarpone mixture and beat until well combined.
In a shallow dish, combine the cooled coffee and raspberry liqueur.
Dip the ladyfingers into the coffee mixture, making sure to fully coat each one.
In an 8x8 inch dish, arrange a layer of soaked ladyfingers on the bottom.
Spread half of the white chocolate mascarpone mixture over the ladyfingers.
Sprinkle half of the fresh raspberries over the mascarpone mixture.
Repeat with another layer of soaked ladyfingers, the remaining mascarpone mixture, and the remaining raspberries.
Cover and refrigerate for at least 2 hours, or overnight.
Before serving, garnish with white chocolate shavings.
