FRIED POTATOES ONIONS AND SMOKE POLISH SAUSAGE
Ingredients:
1 lb. smoked Polish sausage, sliced into rounds
4 medium potatoes, peeled and sliced into thin rounds
1 large onion, chopped
2 cloves garlic, minced
2 tbsp. vegetable oil
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Instructions:
In a large skillet, heat the vegetable oil over medium heat.
Add the sliced Polish sausage and cook until browned on both sides. Remove from skillet and set aside.
Add the sliced potatoes to the skillet and cook until browned and crispy, about 10-12 minutes. Stir occasionally to prevent sticking.
Add the chopped onion and minced garlic to the skillet with the potatoes and cook until the onions are translucent and the garlic is fragrant, about 3-4 minutes.
Add the cooked sausage back to the skillet and stir to combine with the potatoes and onions. Cook for an additional 2-3 minutes until heated through.
Season with salt and pepper to taste.
Serve hot, garnished with chopped fresh parsley if desired.
