°8 to 10 flour tortillas
°2 cups cooked and shredded chicken
°2 cups grated cheese
°3 tablespoons of butter.
°3 tablespoons of flour.
°2 cups of chicken broth
°1 cup sour cream.
°1 4 ounce green chili pepper, diced

Step 1
Mix the chicken with 1 cup of the cheese, wrap in a tortilla, and place in a 9×13 floured baking dish (seam-side down). Melt the butter in a small skillet over medium heat, then add the flour and cook for 1 minute. Add the broth and whisk until the sauce has softened.
Step 2
Once the sauce has thickened, turn off the heat, add the sour cream and cayenne pepper, and stir to combine. Pour the sauce over the enchiladas and cover with the remaining cheese. In a preheated 350°F oven, bake for 20-25 minutes.
